Okay, it’s not that much of a twist but it was enough to make my husband say “Wow, this is good!” so that’s enough of a twist to make me want to blog about my recipe! I have better success if I use an Instant Pot or my Crock Pot to cook this. If anybody has found a way to do this over the stove without making the meat chewy I want to know about it!
The recipe called for beef broth cube and when I went to go grab it, I realized we were all out. So, in a haste, I went for a chicken broth cube and some curry powder. It was a hit.
Sometimes I pair this up with some egg noodles, jasmine rice or drizzle it over sourdough bread as a sort of poorboy sandwich and serve with a salad.
You’ll need:
Beef cubes – chopped into cubes- either sirloin, chuck or round
Red Wine (we use burgundy wine for cooking)
1 Onion
Salt and pepper (to taste)
1 cube of chicken broth
1/2 tablespoon of curry powder (or to taste)
two tables of wine
1 tablespoon of corn starch
What to do:
Crock Pot: Put meat in crock pot first. Top with pealed, halved, then sliced onion. Followed by a pinch of salt and a dash of pepper, add the chicken broth and curry powder. Pour wine on top until the beef is covered. Cook on low for 8-10 hours, or high for 4 hours. One half hour before meat is done mix the two tablespoons of wine with one tablespoon of corn starch in a small bowl, mix well with the wine sauce that is in the crock pot. When the meat is done, serve, as mentioned above, with hot cooked noodles, rice or as a sandwich…or however you like!
Instant Pot: Put pasta of your choice in first. Top with meat, followed by the onion (pealed, halved then sliced), a pinch of salt and a dash of pepper, followed by chicken broth and curry powder. Fill with wine until meat and pasta are submerged (for lighter taste, mix equal parts water and wine in with the ingredients instead of using all wine. Remember – the pasta will also be cooking in the wine). Blend the two tablespoons of wine with the cornstarch and mix that in as well. Set the instant pot for 12-18 minutes (depending on pasta) on high. Serve with salad…yum…
